QUICK APPLE CAKE

Ingredients

  • 1 egg
  • 1/2 cup / 125 mL granulated sugar
  • 1/3 cup / 75 mL vegetable oil
  • 3 tbsp / 45 mL orange juice or apple juice
  • 1 tsp / 5 mL vanilla
  • 3/4 cup / 175 mL all-purpose flour
  • 1 tsp / 5 mL baking powder
  • pinch salt
  • 1/3 cup / 75 mL brown sugar
  • 1 tsp / 5 mL cinnamon
  • 3 apples, peeled and sliced

Instructions

  1. 1Beat egg with sugar until thick and light. Beat in oil, juice and vanilla.
  2. 2In separate bowl, combine flour, baking powder and salt. Stir into egg mixture and combine only until blended.
  3. 3Combine brown sugar and cinnamon.
  4. 4Arrange apples in bottom of oiled 8-inch/2 L square baking dish. Sprinkle with half the brown sugar mixture. Smooth batter on top. Sprinkle with remaining brown sugar mixture.
  5. 5Bake in preheated 350°F/180°C oven for 35 to 40 minutes, or until cake comes away from sides of pan slightly. Cool for 10 minutes before serving.

Chef's Notes

Although cakes are usually time-consuming, this one is quick enough for a last-minute dessert. Make it first, and by the time you have prepared the rest of the meal and eaten, the cake will be ready to serve. This is a dense cake with great flavour.
