QUICK APPLE CAKE

Serves: Makes 12 pieces
Ingredients
- •1 egg
- •1/2 cup / 125 mL granulated sugar
- •1/3 cup / 75 mL vegetable oil
- •3 tbsp / 45 mL orange juice or apple juice
- •1 tsp / 5 mL vanilla
- •3/4 cup / 175 mL all-purpose flour
- •1 tsp / 5 mL baking powder
- •pinch salt
- •1/3 cup / 75 mL brown sugar
- •1 tsp / 5 mL cinnamon
- •3 apples, peeled and sliced
Instructions
- 1Beat egg with sugar until thick and light. Beat in oil, juice and vanilla.
- 2In separate bowl, combine flour, baking powder and salt. Stir into egg mixture and combine only until blended.
- 3Combine brown sugar and cinnamon.
- 4Arrange apples in bottom of oiled 8-inch/2 L square baking dish. Sprinkle with half the brown sugar mixture. Smooth batter on top. Sprinkle with remaining brown sugar mixture.
- 5Bake in preheated 350°F/180°C oven for 35 to 40 minutes, or until cake comes away from sides of pan slightly. Cool for 10 minutes before serving.
Chef's Notes
Although cakes are usually time-consuming, this one is quick enough for a last-minute dessert. Make it first, and by the time you have prepared the rest of the meal and eaten, the cake will be ready to serve. This is a dense cake with great flavour.
