Roast Tomato Pasta Sauce
Cook: 50 hr 45 min
Serves: Makes 6 servings
Ingredients
- •2 lb (1 kg) ripe plum tomatoes
- •1 medium onion, peeled and quartered
- •12 cloves garlic, unpeeled
- •1 jalapeño chile, whole
- •to taste Salt and pepper
- •1 lb (500 g) spaghetti
- •1/2 cup chopped fresh basil
- •1/2 cup grated parmesan cheese, optional
Instructions
- 1Line baking sheet with parchment paper or aluminum foil.
- 2Arrange tomatoes, onions, garlic and jalapeño on it.
- 3Roast in 425F oven 30 to 45 minutes or until browned.
- 4If garlic is tender before, remove.
- 5Peel garlic; place with roasted mixture in blender or food processor, add salt and pepper and purée.
- 6Transfer mixture to saucepan; heat just before combining with pasta.
- 7Cook pasta until al dente; drain and toss with basil, cheese and sauce.
